Almost Zero Waste Crackers

Crackers are definitely one of the most challenging things to find without packaging, so I decided to have a crack (tehehe) at making some myself. This was my first go and I'm stoked with how they turned out!

As far as I can tell crackers are pretty forgiving, so feel free to have a go at various combinations. This makes a pretty big batch so you may like to freeze half the dough to make later.

1 cup flour
1 tsp baking powder
1/2 cup LSA (this is a powder made of linseed, sunflower seeds, and almonds)*
1/2 tsp salt
1/2 tsp garlic powder
Herbs and spices
1 tbsp oil
1/2 cup warm water
1/4 cup parmesan cheese

Preheat the oven to 170 degrees.

 Add all the ingredients to a bowl in the order they are listed, when you get to the water mix it in little by little until you get a really stiff dough, you may need more than 1/2 a cup. 

Once you have formed your dough cut it into quarters.
Roll each quarter out a bit, fold into thirds, and roll it out again until it's about 2-3mm thick. 

Cut into cracker sized pieces and lay out on baking paper. 

Bake until they aren't bendy, and haven't gone golden. Once you take them out they will crisp up so keep an eye on them - they burn easy! Mine took about 10 minutes. 

Cool on a rack and store in a tin lined with something absorbent.

*I am still using up the last of my pre-zero-waste LSA, but in future I'm going to make my own from bulk bought zero waste ingredients. :)


These are fabulous with a nice homemade chutney and some cheese. I just found out that New World (one of our main supermarket chains in New Zealand) will put deli cheeses in reusable containers if you bring them one, so now I can get cheese plastic freeeee!

Also helping my zero waste mission is the discovery of three fabulous bulk stores where I can get all kinds of dry goods with no packaging at all. Commonsense Organics even has a few oils, soy sauce, and vinegar! It's all very exciting. People have been so nice about my awkward asking if they can put cheese in a recycled pickle jar. :)
