Cookie time!

My exams start next week so what better time to be making cookies than 2am! Here's my never fail, chewy, crunchy, and tasty cookie recipe. Perfect for exams and a great base to add whatever you have lying around to. This time I used chopped dried apricots and hazelnut chocolate which is a great combo.


150g butter
1 cup brown sugar
1/2 cup white sugar
1 egg
2 egg yolks
1 tsp vanilla 
2 cups flour (or 1.5 cups flour and 0.5 cups of almond flour) 
1/2 tsp baking soda
pinch of salt
about a cup of yummy stuff like cranberries and white chocolate chunks, apricots and dark chocolate, or m'n'ms

Soften butter to the point where its almost melted and mix with sugars. Add eggs and vanilla. Sift in dry stuff and mix well. Add yummy bits. If the mix is too runny chuck it in the fridge for a bit to let it solidify.

Make the mix into little blobs and half flatten on baking paper. Bake at 170 for about 15-17 minutes or until just going a tiny bit golden. Don't overcook them, they will get harder as they cool and be nice and chewy.
